PARGO as it's calle din Baja is a deep water Red Snapper with a sweet delicate flavor. You've probably eaten it in restaurants as a plated entree but you've never tried it smoked. We brine our fillets (one whole side of fish) and marinade in a sweet barbque style flavor that goes with anything. Great as an appetizer, on crackers, in dips, as a smoked fish sandwich - you get the idea.
